How to make Avocado Salsa

I have a love for avocados. I could eat them morning, day and night if I had them available. I love ’em on eggs, with tortillas and queso fresco, on a tostada with cotija cheese and my new favorite avocado recipe – as the main ingredient in my mom’s Salsa de Aguacate (Avocado Salsa).

There aren’t many of my mom’s recipes that I can duplicate and know that it’s going to come out just like she makes it. This one, however, is a #NoFail recipe. I love the simplicity of the recipe and how easily it can be duplicated, multiplied, divided, etc.

Chop up everything coarsely (except for the lemon), toss in the blender with a couple of tablespoons of water, season with lemon and salt and voila! You just made the easiest and tastiest avocado salsa.

I've only ever tried avocados one way and wasn't a fan but i've heard that depending on what you eat them with they can really change so i'd like to try them in other ways.

this recipe sounded delicious but when i made it, it tasted disgusting. it was like making potato salad with raw potatoes. how do you get past the taste of raw tomatillos? I’ve always cooked them before. suggestions?

you could try cooking them and seeing if you like that? Maybe I’m just used to the taste because this is how I’ve always had it.

thanks for the response, Pattie. Do you think it may have had something to do with the ripeness of the tomatillos? Here in minnesota, when you find a store that carries them, they seem to be either overripe or hard as a rock. how are they when you make this recipe?

Probably – try putting them in a brown paper bag for a few days until they’re soft. It should feel like a tomato.
