This chicken avocado soup recipe is perfect if you’re into a type of cooking that I’ve been using lately – shelf-cooking. Shelf-cooking is what you do when you’re using what you already have in freezer, pantry or leftovers, to make your meals.

Shelf-cooking eliminates going to grocery store every other day. It also saves you on gas, time and your grocery bill.

Using shelf-cooking technique, I remembered a Chicken Avocado Soup recipe that I have been wanting to try. It is perfect for when you buy too many avocados and don’t know what to do before they go bad… or if you’ve had too much avocado salsa and want to try something else.

Chicken Avocado Soup recipe

If you have leftover chicken, it will be super quick and easy. Just dump everything into blender, then pot for simmering. Added bonus… it’s Keto friendly.

I love playing around with recipes that I find online and tweaking them to what I have on hand. This soup is a basic recipe and can be altered to what you have on hand, or taste buds.

Add a few chile pasillas or chiles serranos for a kick and more flavor to sauce. A can of corn or potatoes would add more substance to the finished product. Just keep the base the same… avocado, onion, cilantro and chicken bouillon and/or chicken broth.

Tip: Next time you see those avocados looking wrinkly and dark brown, make this yummy soup!!

Chicken Avocado Soup Recipe

Serves 4

Ingredients

  • 2-3 cups shredded chicken
  • 2 large avocados
  • 1/2 large onion or 1 medium onion
  • 12 cups of water
  • 2 TBS chicken bouillon
  • 1 large handful of cilantro
  • 1/2 lemon, juiced
  • Salt / Pepper to taste

Directions

  1. Place avocados, onion, cilantro, chicken bouillon, 6 cups water in blender. Add the juice of half a lemon.
  2. Blend on high till smooth.
  3. Pour into large pot and add 6 more cups of water.
  4. Add shredded chicken and salt/pepper to taste.
  5. Simmer for 30 minutes and serve warm.

Serve with as many toppings as you like. We suggest chopped tomatoes, sour cream, tortilla strips, and cotija cheese.
