Weekly vegetarian family meal plan: Week 1

I’m often asked what I eat when people find out that I’m a vegetarian Latina… and then when they find out that the kids are vegetarian too, well the conversation carries on. So I decided to start posting our weekly vegetarian family meal plan, starting with this week.

I do all my grocery shopping at my local Mexican grocery store, Northgate Market, where I’m lucky enough to find both vegetarian alternatives and our favorite hispanic products. Also, I don’t do meals with a lot of ingredients or time-consuming recipes. If I can do it – so can you! LOL

A few more notes Рwe have a $100 weekly grocery budget. I pack lunch for Luca (the 5 year old), the 8 year old eats school lunches. Also, we have a $100 weekly miscellaneous budget that we use for different things like coffee runs, clothes, and we also use it to eat out once a week Рusually on Saturday. Any questions?
