Celebrating our love for avocados

I love avocados. And when I’m invited to a fiesta by the same name, well, it’s a no-brainer that I will be there.

Over the weekend I had the opportunity to attend a delicious fiesta. I mean, seriously good. I’ve been an avocado fiend since as long as I can remember. Both my kids were given mashed avocados as their first foods! So when I received an invite to attend a party revolving solely around avocados and fun bloggers, I immediately RSVP’d yes.

Upon walking in I was greeted with basil-infused agua and a “perico” – an alcoholic drink composed of grapefruit soda, tequila and a pinch of salt. The basil-infused water is a drink available in a lot of Mexican restaurants to help aid digestion. I happily had both.

Being a fan of anything semi-homemade, I was happy when our awesome host, Maura Hernandez of The Other Side of the Tortilla, told us that the first dish could be done as such.

Make the avocado hummus pictured above by mixing in avocado into store-bought hummus. That’s it! You.are.done.

Fruit guacamole is made by adding some pomegranate seeds and diced mango to traditional guacamole. It’s wonderfully fruit and with a touch of lime, is a delicious Summer treat. Again, this dish takes little time to make.

You may not have a molcajete available in your home, but don’t let that stop you from serving this dish.  Make up some salsa verde (tomatillo, jalapeño, lime and onion) and then serve it with sides of queso fresco and avocado. The best way to have it is with some freshly-made tortillas and a pinch of salt.

Every great party has dessert, right? Well this one was no exception. Maura served up some delicious avocado popsicles and lucky for us, she has posted the avocado popsicles recipe for you to recreate at home! As much as an avocado lover that I am, even I was a bit hesitant to try this one. I am so glad I did! They were absolutely delicious and I look forward to making them for the kids.
Our hostess with the mostess was absolutely wonderful and the guests were just as awesome. I had such a great time! I’m also currently accepting avocado donations.
